In September 2011, Le Cordon Bleu launched its diploma in Wine and Management. The 2011-2012 vintage is made up of twenty students who, until June 2012, will are under the expert instruction of Franck Ramage.
Franck Ramage first worked as Assistant Head sommelier at the Crillon for seven years, before becoming a Professor in Sommellerie for eleven years at the Albert de Mun School in Paris. He joined Le Cordon Bleu in September 2011. As Head of the school's Wine Department, his first task was to transform the Sommellerie program. "When our students finish their training, they don't necessarily become sommeliers, Franck Ramage explains. As such, we decided to create a curriculum which would be equally suited to Sommellerie, Communication, Events, Enotourism, Export, or to a person working as a Wine Merchant." And so the Wine and Management Program was born.

Different backgrounds
The first class is made up of 20 students, all from different cultures and backgrounds. "We have students from the USA, the UK, Asia… There is only one French student; she's an opera singer and wants to work as a wine broker." There is also a lawyer, a professor of Geopolitics, a journalist and an engineer. With such a variety of characters, "it took almost a month to build a solid group", explains Franck Ramage. Students follow a nine month course with 25 hours of lessons per week. They also complete two internships during the year. The first is a two week internship"in a small vineyard during the harvest, both to learn how wine is made and to share a life experience". The second lasts six weeks and can be in a restaurant, a hotel, in an events company, with a wine merchant... The students also visit the Rungis market, participate in a dozen culinary demonstrations with food and wine pairings, and carry out daily tastings both at the Le Cordon Bleu and in other renowned establishments. Five two-day trips to vineyards are also organized. The first class will visit Roussillon, the Rhône Valley, Champagne, Bordeaux and Cognac.

Intensive assessment
Franck Ramage expects a certain level of personal development from his students. The final exam is far from being merely a formality. It includes four hours of written examinations, a tasting, marketing, and a professional interview, without forgetting the two internship reports which must be presented to the panel. This ensures that when students leave Le Cordon Bleu, they are ready to begin a new career in the world of wine. Many enter the program with a good idea of the path they wish to forge upon graduation, such as the BBC journalist who hopes to create a TV channel dedicated to wine. As a result, applications for 2012 and 2013 are flooding in. Remember, places are limited and are assigned on a first-come first-served basis via the Le Cordon Bleu website.
