"The delicious Peruvian who conquered the world" - a Le Cordon Bleu conference |
On March 5, Le Cordon Bleu Paris held an event led by the Peruvian Cultural Center (CECUPE) with Sara Beatriz Guardia, researcher at the University of San Martin de Porres and author of several cookbooks, and Georges Carantino, historian and Vice President of the French Association of Agriculture Museums and Rural Heritage. The conference began with an introduction from Yolanda Rigault, President of CECUPE, followed by a presentation from Sara Beatriz Guardia, author of the book "La Ruta de la Papa". The group was kind enough to share research and knowledge on the potato, what it has been through since its discovery, and its importance to history and humanity. This was a key event for Le Cordon Bleu, given the success of the "Le Cordon Bleu Peru" Culinary Academy and our publications about potatoes and quinoa, demonstrating that French culinary techniques – the basis of what our school teaches – can be adapted to all types of cuisine worldwide.
