| Chef Machiko Chiba Visits London |
| Le Cordon Bleu London welcomed Japanese chef, author and inventor Machiko Chiba to the London institute on the 25th of October for a demonstration of ‘wagashi’ recipes – traditional Japanese confectionery. |
| For an audience of Le Cordon Bleu students, the award-winning chef created dishes of ‘nerikiri’ (a sweet white bean paste), ‘ohigashi’ (fine rice powder with syrup), and ‘kingyoku’ (agar agar and potato sugar). Wagashi is traditionally served before drinking tea, and the taste and appearance of items changes with the seasons. |
| Based in Tokyo and New York, Chef Chiba is the inventor of the award-winning Cook-Zen cooking pot. An advocate of ‘good food and good health’, Chef Chiba teaches her culinary techniques to aspiring chefs around the world and is the author of over 14 cookbooks including ‘Japanese Dishes for Wine Lovers’. |
| Chef Chiba has received a number of awards for her work, including the National Economic and Industrial Director’s Award for her Cook-Zen product. She has also been awarded the grand prize at the National Nori-Seaweed Cooking Competition, National Tofu Cooking Competition, and National Meat Society Cooking Competition |
