"SOMTUM", by Le Cordon Bleu Dusit School in Thailand, nominated "Best in the World" in the Gourmand World Cookbook Awards
The new Le Cordon Bleu cookbook “SOMTUM: a Meeting of Flavours, Tastes and Cultures” has been nominated for Best in the world in the Gourmand World Cookbook Awards in the Asian category.
The winners will be announced on in Paris March 6 at the Folies Bergères Theatre, the day before the opening of the Paris CookBook Fair (March 7 to 11).
“SOMTUM: a Meeting of Flavours, Tastes and Cultures” was created by Le Cordon Bleu Dusit in Thailand – led by Executive master Chef Fabrice Danniel.
The first half of this new book looks at the origins and history of Somtum; the health benefits, and what is usually served with Somtum. We also invited Siam Winery’s wine maker, Kathrine Puff, to discuss what local and international wines and other beverages match best with Somtum. We also profile the origins of Chili and Papaya and how they arrived in Thailand from Mexico and South America hundreds of years ago – thanks to the Portuguese and Spanish explorers.
The second half of the book contains 23 recipes, mostly classic French or very creative fusion dishes divided amongst appetizers, desserts, fish and seafood, meat and poultry. Our Le Cordon Bleu Ambassadors, Khun Phol Tantasantien and Khun Reed, both Thai celebrity Chefs contributed their own recipes to the book.
This beautifully designed and photographed cookbook will be presented at the Paris Gourmand Cook Book Festival. During a cuisine demonstration to take place on March 11, at 12pm by Le Cordon Bleu Chef instructor Philippe Clergue and Chef Oth Sombath (Oth Sombath restaurant Paris), Ambassador for Thai cuisine in France.
